Food Friday #5


Do you have lots of apples?  Need a recipe to use some of those delicious apples?  Well, here's a cake I am sure you will enjoy.  This is a dense cake and I don't always put the glaze on it...your choice!!
I've made this cake many times and it is yummy...especially during the fall season when apples are abundent!!

Raw Apple Cake












Ingredients:
  • 2 Cups Sugar
  • 1-1/2 Cup Oil
  • 3 Eggs
  • 3 Cups All Purpose Flour*
  • 1/2 Teaspoon Salt
  • 1 Teaspoon Baking Soda
  • 1 Teaspoon Vanilla Extract
  • 3 Cups Chopped Tart Apples
  • 1-1/2 Cups Chopped Nuts (pecans or walnuts)
*Note: Self-rising flour may be substituted for all purpose flour, baking soda and salt.

Instructions:

  • Beat with Mixer: Sugar, Oil and Eggs until well blended.
  • Add Flour, Salt, Soda and Vanilla gradually.
  • By hand, stir in apples and nuts until well blended.
  • Pour into greased or sprayed tube pan.
  • Bake 1 Hour and 10 Minutes in 350 degree preheated oven.

Cake Topping:
  • 1 Cup Light Brown Sugar
  • 1-1/2 Stick Margarine
  • 1/4 Cup Milk
  • (whole pecans may be added for garnish)
Bring to rolling boil and cook for 3 minutes, stiring constantly. Pour over warm cake.
