We Ate Seaspuds!!

Do you know what a seaspud is?? (No, it's not the photo of Mr. Potato Head!!! I just chose it to get your creative juices flowing!! Lol!!)  While we were visiting the North Carolina Seafood Festival in Morehead City, someone told Dale about a group selling seaspuds.  Of course, we scouted out the tent and sure enough there they were!!  Seaspuds are absolutely delicious....they are potatoes stuffed with seafood. Yummy!!

I found a recipe...actually two recipes and these yummy spuds will become a regular addition to meals at our house.  Of course.... I'll share them with you!!! 


Seaspuds

Ingredients:
4 Baked potatoes  
1 cup sour cream  
1/2 cup cooked shrimp  
1 tsp. lemon juice  
2 Tbsp. mayonnaise  
1/3 cup bacon bits  
1 tsp. hot sauce or Tabasco sauce  
1/2 tsp. garlic powder  
1/2 tsp. dill
1/3 cup diced green onions  
1/2 cup cooked crab meat 
Directions:
Bake spuds and cut lengthwise in half.
Scoop out the potato and mash it.
Add the rest of the ingredients to the mash and mix up.
Put the mixture back into the potato skins.
Microwave for 2-3 minutes or put under broiler.


Seafood Stuffed Potatoes


Ingredients:

6 medium baking potatoes
1/2 cup (1 stick) butter
1 teaspoon seafood seasoning (such as Old Bay)
2 1/2 teaspoons grated onion
1 teaspoon grated green onion
1/2 cup sour cream
salt and freshly ground pepper
1 cup grated sharp Cheddar cheese
1/2 pound fresh lump crab meat
1/4 pound fresh cooked shrimp
1/2 teaspoon paprika
Directions:
Preheat oven to 450°.
Scrub potatoes and bake 30 minutes.
Pierce potatoes with a fork and turn them over.
Bake for another 20-30 minutes.
Remove from the oven and cool briefly.
Cut each potato in half lengthwise.
Carefully scoop potato from the skins into a mixing bowl.
Add the butter, seafood seasoning, onions, sour cream, salt, and pepper.
Fold in cheese, crab meat, and shrimp.
Fill each potato skin with seafood mixture.
Arrange on baking sheet and bake for 15 minutes.
Remove from oven and sprinkle with paprika.
