Food Friday #16


Sausage-Cheese Muffins
My daughter, Prissy, sent me this recipe and she says these muffins are absolutely delicious and so easy to make.  These would be perfect for Mother's Day or Father's Day!!  Plus this is a recipe from Southern Living...so you know you can't go wrong!!


Make these savory muffins for a flavorful addition to your breakfast or brunch standards. With only five ingredients, the hardest part is getting out of bed to enjoy them.

1 (1-lb.) package hot ground pork sausage
1 tsp onion powder
3 cups all-purpose baking mix (like Bisquick)
2 cups shredded Cheddar cheese
1 (10.75 oz) can condensed cheese soup or fiesta nacho cheese soup
3/4 cup buttermilk (water or milk will work too)

PREPARATION:
1. Cook sausage and onion in a large skillet over medium to medium high heat, stirring until it crumbles and is no longer pink. Drain and cool.
2. Combine sausage, baking mix, and shredded cheese in a large bowl. Make a well in the center of the mixture.
3. Stir together soup and 3/4 cup buttermilk (or water); add to sausage mixture, stirring just until dry ingredients are moistened. Spoon into lightly greased muffin pans, filling to top of cups.
4. Bake at 375° for 20 to 25 minutes or until lightly browned.

Food Friday #15



Do you love bread????  Warm, delicious bread???  If so, here's a quick and easy way to make Garlic Knots!!  I made these (doubled the recipe) for Souper Sunday and they were, I think, a hit (does an empty tray indicate a hit??)!!!  LOL!   Give them a try...you won't be disappointed!!


Garlic and Herb Parmesan Knots

This super easy recipe is a good one for kids to make. All you have to do is tie the dough in knots, roll it in butter and herbs, sprinkle with cheese, and bake.
Prep Time: 10 minutes
Cook Time: 15 minutes
Total Time: 25 minutes

Ingredients:
·         1 can refrigerated soft breadstick dough
·         2 Tbsp. butter, melted
·         1/2 tsp. garlic powder
·         1/2 tsp. dried basil leaves
·         1/2 tsp. dried thyme leaves
·         3 Tbsp. grated Parmesan cheese
Preparation:

Preheat oven to 350 degrees. Separate dough into 8 rounds and gently unroll. Loosely tie a knot with each breadstick, then tuck ends under to make a knot. In a small bowl, combine butter, garlic powder, and herbs and mix well. Brush this mixture over top of rolls, using all of the mixture.

Sprinkle with Parmesan cheese, and bake at 350 degrees for 12-17 minutes until golden brown. Remove immediately from cookie sheet to wire rack; serve warm.

It's Food Friday with a VDay Twist!!



Valentine's Day is just around the corner!  Need a sweet treat for your "special ones"??  Well check out this tasty Valentine treat from Six Sisters Stuff.


Valentine Neapolitan Cupcakes




Ingredients:
  • 1 (19.5 ounce) package brownie mix
  • 2 eggs
  • 1/2 cup vegetable oil (you could also use canola oil)
  • 1/4 cup water
  • 1 (18.25 ounce) package strawberry cake mix (or any flavor you want)
  • 2 tablespoons vegetable oil (you could also use canola oil)
  • 1 1/3 cups water
  • 3 egg whites

Directions:

  1. Preheat an oven to 350 degrees F (175 degrees C). Line 40-48 muffin cups with paper liners (I only got about 40 cupcakes, but you may get more).
  2. Whisk together the brownie mix, 2 eggs, 1/2 cup canola oil, and 1/4 cup water in a bowl. Stir just until fully incorporated, about 50 strokes; set aside.
  3. Mix the cake mix, 2 tablespoons canola oil, 1 1/3 cup water, and 3 egg whites in a large bowl with an electric mixer on low speed until combined. Mix on medium speed for 2 minutes.
  4. Spoon the brownie batter into prepared muffin cups, filling each cup 1/3 full. Spoon the cake batter over the brownie batter, until muffin cups are each 2/3 full.
  5. Bake in the preheated oven until golden and the tops spring back when lightly pressed, about 20 minutes.

Buttercream Icing:
  • 1/2 cup solid vegetable shortening
  • 1/2 cup butter or margarine
  • 4 cups (1 lb) sifted confectioners sugar
  • 2 tablespoons milk
  • 1 tsp vanilla
  • Food coloring (if you want pink add 4 drops of red food coloring to the icing)
Cream butter and shortening with electric mixer. Add vanilla. Gradually add sugar, one cup at a time, beating well on medium speed. Scrape sides and bottom of bowl often. When all sugar has been mixed in, icing will appear dry. Add milk and beat at a medium speed until light and fluffy.
If you need to thin this icing, add a small amount of light corn syrup.
For best results, keep icing bowl in refrigerator when not in use. It can be refrigerated in an airtight container for up to 2 weeks. Rewhip before using. Yields 3 cups.

Food Friday- Groundhog Treats!!!


Groundhog Day is coming!!!  Check out these cute treats!!

Punxsutawney Phil's Groundhog Day Cookies

Ingredients:
Peanut Butter Cookie Dough (or sugar cookie dough)
Granulated Sugar
Hershey's Kisses
Chocolate cookies (I used Grasshopper cookies)
Small Marshmallows
Chocolate Chips
Chocolate icing (I used some Betty Crocker right from a can! Ack!)
Green icing (I used buttercream icing tinted green)
Pink Starburst candies, mimi M & M's, or gumdrops (for the nose)


Directions:Preheat oven to 375 degrees. Take a golf-ball sized pinch of cookie dough and flatten slightly in your hand. Place one hershey's kiss in the center of the dough and wrap dough around it, completely covering the hershey's kiss.
Roll in granulated sugar and place on a greased cookie sheet.
Bake at 375 for 10 minutes, until edges are barely brown and cookies are set. Let cool completely.

Trim a storebought chocolate cookie slightly on one side and press into cooled cookie.
Using scissors, snip off two pieces of a small marshmallow for eyes, adhere to chocolate cookie w/ a little chocolate icing. Add a piece of gumdrop (or whatever) for a nose and two chocolate chips for ears (again using chocolate icing as your "glue"). Add two small drops of chocolate icing for eye pupils. Place green icing in a plastic baggie, snip off one end, and add some "grass" on your cookie.

Directions:
Bake your favorite chocolate cupcakes
Frost cupcakes with chocolate frosting
Add two chocolate frosting cheeks
Add white chocolate disks for eyes with mini chocolate chips in center (attach with frosting)
Add chocolate chip for nose
Add white chocolate hearts for mouth and shaved chocolate for fur.
Enjoy!!

Food Friday-#12


Since it's National Soup Month, I'm going to share a French Onion Soup recipe today.  French Onion Soup is by far a favorite in our house and Prissy's house as well.  Prissy (nickname for my oldest daughter) made this recently and shared the recipe with me.  She said it was delicious!!! 


French Three Onion Soup

Ingredients:

  • 1 tablespoon unsalted butter
  • 1 teaspoon extra-virgin olive oil
  • 1 1/2 pounds yellow onions, peeled, halved, and thinly sliced, (about 6 cups sliced)
  • 6 shallots, thinly sliced, (1 3/4 cups)
  • 1 leek, white and light green part thinly sliced, washed well, and dark green top reserved
  • Kosher salt and freshly ground black pepper
  • 3 to 4 fresh thyme sprigs
  • 1 fresh rosemary sprig
  • 1 tablespoon all-purpose flour
  • 4 cups low-sodium beef broth
  • 2 cups water
  • 2 teaspoons Worcestershire sauce
  • 1/4 cup dry sherry
  • 8 (1/4-inch thick) slices whole-wheat baguette (2 ounces), toasted
  • 1/2 cup finely grated Gruyere (about 1 3/4 ounces)
  • 1 tablespoon chopped fresh chives
Directions:

1. Heat the butter and oil together in a Dutch oven over medium heat. Add the onions, shallots and leek, and season with salt and pepper, to taste. Stir to combine and cover. Cook, without stirring until the onions are soft and beginning to brown, about 10 to 15 minutes.
2. Uncover, and continue to cook, stirring often, until the onions are a rich brown color and well caramelized, about 25 to 30 minutes. (If the onions begin to stick to the bottom of the pan or burn add about a 1 tablespoon water at a time.) Meanwhile, tie the reserved leek top with the thyme and rosemary using a piece of kitchen twine.
3. Sprinkle the flour over the onions and cook, stirring, to cook out the raw flour taste, about 2 to 3 minutes. Stir in the broth and 2 cups water, scraping any browned bits from the bottom of the pan; add the herb bundle. Reduce the heat and simmer until thickened, 20 to 25 minutes. Stir in the Worcestershire and remove from the heat. Discard the herb bundle, stir in the sherry and season, to taste, with salt and pepper.
4. Preheat the broiler. Divide the soup between 4 (16-ounce) oven proof bowls or ramekins and arrange them on a baking sheet. Top each bowl evenly with 2 baguette slices and top with the cheese. Put under the broiler until the cheese is melted and lightly browned, about 1 minute. Sprinkle with the chives and serve.

Food Friday!

I love having soup in the winter so I'm always looking for new recipes to try.  This one is cooked in the Crock Pot and has received rave reviews all over the internet.  Yum!!


Loaded Baked Potato Soup













Ingredients:
6 large baking potatoes, peeled, cut in 1/2 -inch cubes
1 large onion, chopped
1 quart chicken broth
3 garlic cloves, minced (or pressed)
1/4 cup butter
2 1/2 teaspoons salt
1 teaspoon pepper
1 cup cream or 1 cup half-and-half cream
1 cup shredded sharp cheddar cheese
3 tablespoons chopped fresh chives
1 cup sour cream (optional)
8 slices bacon, fried & crumbled
cheese, for sprinkling

Directions:
1. Combine first seven ingredients in a large crock pot; cover and cook on
HIGH for 4 hours or LOW for 8 hours (potatoes should be tender).
2. Mash mixture until potatoes are coarsely chopped and soup is slightly
thickened.
3. Stir in cream, cheese and chives.
4. Top with sour cream (if used), sprinkle with bacon and more cheese.


Nutrition:
553 calories, 37 grams fat, 39 grams carbohydrates, 17 grams protein per serving.

Food Friday-#10


Today I want to share some cheese ball recipes with you.  Each recipe is easy to make and tastes delicious.  The first recipe is a Christmas favorite at our house....even for those who don't normally eat oysters!!!

Oyster Ball













Ingredients:
  • 1 8 oz. package of cream cheese
  • 1 tin of smoked oysters
  • 1 tsp. lemon juice
  • 1 tsp. onion salt
  • 6-8 drops of Tabasco Sauce (we like it spicy so I always add more)
  • Chopped parsley flakes or pecans
Directions:
Soften cream cheese.
Wash, drain and chop smoked oysters.
Add oysters, lemon juice, onion salt and Tabasco Sauce to softened cream cheese.
Form mixture into a ball and place on wax paper.  Roll ball in parsley or chopped pecans.
Wrap ball in wax paper or Saran Wrap and refrigerate until ready to serve with your favorite crackers.




Parmesan-Cream Cheese Ball
 





 




Ingredients:
  • 2 (8 ounce) packages cream cheese, softened
  • 1/2 cup mayonnaise
  • 1/3 cup grated Parmesan cheese
  • 10 slices bacon, cooked and crumbled
  • 1/4 cup chopped green onions
  • 1/4 teaspoon freshly ground black pepper
  • Pinch of kosher salt
  • Cayenne pepper to taste (optional)
  • 1/2 cup chopped fresh flat-leaf parsley


Directions:
Using an electric mixer, combine the cream cheese, mayonnaise, and Parmesan cheese in a large bowl until well blended. Stir in the bacon and green onions. Add the black pepper, salt and cayenne pepper if using. Using a rubber spatula, gather the cheese mixture into a rough ball. Lay out a sheet of plastic wrap and scatter the parsley all over. Transfer the ball to the plastic wrap. Tightly wrap the cheese ball in the plastic wrap making sure the parsley adheres, twisting at one end to form a tight ball. Chill the ball for at least 3 hours. When ready to serve, remove the plastic and place the ball on a serving plate. serve with assorted crackers and vegetables.



Pineapple Cheese Ball




Ingredients: 
  • 1-1/2 packages (12 oz) cream cheese
  • 1 small can crushed pineapple (well drained)
  • powdered sugar (to taste- approximately 2-3 Tbsp.)
  • green onion (optional-to taste, approximately 2 Tbsp.)
  • chopped ham (optional-to taste, approximately 2-3 Tbsp. You can use deli meat ham)
  • chopped pecans (about 1 cup worth)

Directions:
Combine all ingredients together.
Mash into a ball and chill.
Roll in crushed pecans or slivered almonds.
Refrigerate until served. Serve with crackers.
Enjoy!

Food Friday-#9


Goodness, it's Friday again!!!!  Time for another easy holiday recipe.  I made this for Thanksgiving but since cranberries are also used at Christmas time, I thought someone might want to make it as a side for their Christmas lunch or dinner.  This recipe is so easy to make and oh, so delicious!!!  Try it...I think you'll like it!!





CRANBERRY RELISH

From The Stocked Pot and Co.

 Ingredients:

1 lb fresh cranberries (rinse them off prior to using)
1 cup sugar
1 seedless orange, cut into eight pieces, skin on
1 apple, seeds and stem removed, cut into eight pieces, skin on


Directions:

Place all the above ingredients into a food processor, pulse till the desired consistency is achieved, do not over process. Store in a container with a tight fitting lid, will keep for 4 weeks in refrigerator, always use a clean spoon when removing relish.

This particular day, I was not disappointed.  She made a delicious, light dessert that we all oohed and ahhed over.  So...I asked her for permission to share the recipe for that tasty delight and she graciously agreed!  Try this recipe, it's easy and oh so yummy!!

Food Friday-#7



With Thanksgiving just around the corner and Holiday Parties soon to follow, maybe you are looking for some easy but tasty recipes to make for these special times???  So I dug into my recipe collection and found two favorites to share with you!!  Both recipes make great appetizers to serve to your friends and family...yummmm!!!


Hot Artichoke Dip


Ingredients:

2 cans of artichoke hearts, drained and chopped
3/4 cup mayonnaise
1/4 teaspoon garlic powder
1 cup Parmesan Cheese (save 1/4 cup for topping)

Directions:
Mix chopped artichokes, mayonnaise, garlic powder and 3/4 cup Parmesan Cheese. 
Place mixture in baking dish and sprinkle 1/4 Parmesan Cheese on top.
Bake at 350 degrees for 20-30 minutes until brown and bubbly.
Serve with a variety of crackers or pita chips


 
Shrimp Dip

Ingredients:
1/4 cup milk
1 cup Miracle Whip Salad Dressing
1 tablespoon Worcestershire Sauce
1/4 teaspoon garlic salt
3 drops Tabasco Sauce (more if you like it spicy)
1 small onion quartered
1 5 oz. can shrimp, drained
1/2 pound Cheddar cheese, cubed

Directions:
Put all ingredients in blender and process at "blend" until smooth.
Chill.
Serve with crackers, veggies or chips

Food Friday #6


My step-granddaughter, KK, loves broccoli....not just a little...she will order broccoli over any other side be it fries, chips, etc.  So I've been going through some of my old recipes to find a way to fix broccoli for Thanksgiving. I found a family favorite which I plan to make for her this year.  Maybe you have a broccoli lover at your house too, if so I'll share the recipe with you!!


Broccoli Casserole











Ingredients:
1 package (10 ounces) frozen, chopped broccoli
1/2 cup mushroom soup
1/4 cup mayonnaise
1/2 teaspoon fresh onion
1/2 cup grated sharp cheese
1 beaten egg
1 cup Ritz crackers, crumbled
1/2 cup melted butter or margarine


Directions:
Cook broccoli for 5 minutes in boiling water.
Drain and then steam broccoli over boiling water 10 minutes
Mix soup, mayonnaise, onion, cheese, egg with broccoli
Mix crumbled Ritz crackers and butter/margarine together.
Sprinkle crumbled Ritz crackers over the top
Place in small casserole dish and bake at 400 degrees for 20 minutes

Food Friday #5


Do you have lots of apples?  Need a recipe to use some of those delicious apples?  Well, here's a cake I am sure you will enjoy.  This is a dense cake and I don't always put the glaze on it...your choice!!
I've made this cake many times and it is yummy...especially during the fall season when apples are abundent!!

Raw Apple Cake












Ingredients:
  • 2 Cups Sugar
  • 1-1/2 Cup Oil
  • 3 Eggs
  • 3 Cups All Purpose Flour*
  • 1/2 Teaspoon Salt
  • 1 Teaspoon Baking Soda
  • 1 Teaspoon Vanilla Extract
  • 3 Cups Chopped Tart Apples
  • 1-1/2 Cups Chopped Nuts (pecans or walnuts)
*Note: Self-rising flour may be substituted for all purpose flour, baking soda and salt.

Instructions:

  • Beat with Mixer: Sugar, Oil and Eggs until well blended.
  • Add Flour, Salt, Soda and Vanilla gradually.
  • By hand, stir in apples and nuts until well blended.
  • Pour into greased or sprayed tube pan.
  • Bake 1 Hour and 10 Minutes in 350 degree preheated oven.

Cake Topping:
  • 1 Cup Light Brown Sugar
  • 1-1/2 Stick Margarine
  • 1/4 Cup Milk
  • (whole pecans may be added for garnish)
Bring to rolling boil and cook for 3 minutes, stiring constantly. Pour over warm cake.

It's Food Friday, Again!


I found a really easy appetizer you can make for parties, tailgating or just because!  It's a recipe from Weight Watchers...so that is an added bonus!!

Salsa Roll-Ups










Ingredients:
4 oz. (1/2 of 8-oz. pkg.) Philadelphia cream cheese, softened
3 Tbsp. your favorite salsa
4 flour tortillas (6 inch)
1/2 cup Mexican style 2% milk finely shredded cheese
1/4 tsp. chili powder

Directions:
Mix Philadelphia cream cheese and salsa; spread onto tortillas.
Top with remaining ingredients.

ROLL up tortillas tightly. Cut each crosswise into 5 slices

Makes 10 Appetizers (2 little roll-ups per serving)

It's Food Friday...Got Chicken???



Here are two fairly easy chicken casserole recipes I found over at Pioneer Woman's website!!  You can't go wrong using one of her recipes....so delicious!!!


Chicken Spaghetti




Ingredients:
2 cups Cooked Chicken (I used 4 skinless chicken breasts)
3 cups Dry Spaghetti, Broken Into Two Inch Pieces
2 cans Cream Of Mushroom Soup
2 cups Grated Sharp Cheddar Cheese
¼ cups Finely Diced Green Pepper
¼ cups Finely Diced Onion
1 jar (4 Ounce) Diced Pimentos, Drained
2 cups Reserved Chicken Broth From Pot or Canned Chicken Broth
1 teaspoon Lawry's Seasoned Salt
⅛ teaspoons (to 1/4 Teaspoon) Cayenne Pepper
Salt And Pepper, to taste
1 cup Additional Grated Sharp Cheddar Cheese


Preparation Instructions:

Cook 1 cut up fryer or skinless chicken breasts and pick out the meat to make two cups. Cook spaghetti in same chicken broth until al dente. Do not overcook. When spaghetti is cooked, combine with remaining ingredients except additional 1 cup sharp cheddar.

Place mixture in casserole pan and top with remaining sharp cheddar. Cover and freeze up to six months, cover and refrigerate up to two days, or bake immediately: 350 degrees for 45 minutes until bubbly. (If the cheese on top starts to get too cooked, cover with foil).


Creamy Chicken Spaghetti Casserole











Ingredients:

  • 1 whole Cut Up Fryer Chicken (I used 4 skinless chicken breasts)
  • 1 stick 1/2 Cup Butter
  • 16 ounces, weight White Mushrooms, Sliced
  • ¼ cups Dry White Wine
  • Kosher Salt And Pepper
  • ¼ cups Flour
  • 2 cups Chicken Broth (reserved From Chicken Or Canned)
  • 1-½ cup Whole Milk
  • ¼ cups (additional) Dry White Wine
  • 1 cup Freshly Grated Parmesan Cheese
  • 1 cup Whole Black Olives, Chopped
  • 1 teaspoon Kosher Salt, Or To Taste
  • Freshly Ground Black Pepper
  • Extra Cheese, For Sprinkling
  • 1 pound Thin Spaghetti

Preparation Instructions:

Place chicken in a pot of water and boil on medium-low heat for 30 to 40 minutes. Remove chicken from pot and allow to cool slightly. Keep broth in pot.
Melt 2 tablespoons butter in a large skillet. Throw in mushrooms, add 1/4 cup white wine, and sprinkle with salt and pepper. Cook over medium heat for 8 to 10 minutes, or until liquid has totally evaporated. Remove mushrooms from skillet. Set aside.
Bring broth to a boil. Break spaghetti into thirds (shorter pieces). Add spaghetti pieces to boiling broth and cook. Drain when al dente. Remove meat from bones and shred until you have 2-plus cups of shredded chicken.
Return large skillet to medium-low heat. Add 6 tablespoons butter. Sprinkle flour over butter, whisking to combine. Cook for 1 or 2 minutes. Pour in 2 cups broth and whisk to combine. Pour in milk, additional 1/4 cup wine, salt and pepper to taste, then cook and bubble until thick. Turn off heat, add Parmesan cheese, and stir.
Add mushrooms, chicken, and chopped olives. Stir to combine and check seasonings. Add cooked spaghetti and stir.
Turn into a 9 x 13 casserole pan. Bake at 350 degrees or until golden brown and bubbly. Serve with salad and warm, crusty bread.

It's Food Friday!!

  
As you can tell, I love to find new recipes and today is no exception.  While joining some blog hops this week, this recipe, Chicken Kisses, caught my eye!!!  I found it over at Shugary Sweets.  Can't wait to try this one out because it looks delicious!!!!


Chicken Kisses











Ingredients:
4 cups cooked, diced chicken (use a Rotisserie for easy, or make some ahead of time, I microwave 4 large boneless breasts in a stoneware cooker and dice it up- do what's easy for you!)
8 oz cream cheese, softened
8 Tbsp butter, softened
1 tsp salt
1/2 tsp pepper
1/4 cup milk
1 Tbsp minced onion
2 packages crescent rolls
1 jar Heinz chicken gravy, warmed

Directions:
Mix chicken, cream cheese, butter, spices, milk and onion in bowl. Unroll crescents and using two crescent rolls at a time (to form a rectangle) fill with stuffing. Pinch up the corners (makes 8 packets). Bake at 375 for about 15-20 minutes. Serve with warmed gravy! Enjoy!
